Refreshing recipe for a summer salad

Ingredients:

  • 4 cups mixed salad greens (such as lettuce, spinach, or arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup fresh strawberries, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced red onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped walnuts or almonds (optional)
  • Juice of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, strawberries, crumbled feta cheese, red onion, basil, mint, and nuts (if using). Toss gently to mix everything together.

  2. In a small bowl, whisk together the lemon juice, extra-virgin olive oil, salt, and pepper to make the dressing.

  3. Drizzle the dressing over the salad and toss again to coat the ingredients evenly.

  4. Taste and adjust the seasoning if needed.

  5. Serve the summer salad immediately and enjoy the refreshing flavors!

Feel free to customize the salad by adding other seasonal fruits or vegetables of your choice. You can also add grilled chicken, shrimp, or tofu for a protein boost. Enjoy this light and delicious salad as a side dish or a main course during the hot summer months!
